Perfect pasta by Sue
- Use a large stockpot to allow pasta to move freely in the boiling
water. Use 4-6 quarts of water to cook 1 pound of pasta.
- It's not necessary to add salt or oil to the water; I omit them
to avoid adding sodium and fat. You might try a little lemon juice
for extra flavor.
- Bring water to a rolling boil and add pasta gradually to the water
to it will continue to boil. Once all the pasta has been added, let
water absorb for about 4 minutes, then stir gently. Because our pasta
does not have any preservatives or additives, it is important to stir
occasionally and gently to prevent breakage.
- Cooking times vary depending on the shape and size of the pasta.
Begin checking for doneness after 4-7 minutes. Remove a piece of pasta
from the water and bite into it; perfectly cooked pasta will have
a firm, tender consistency. This is 'al dente' (Italian for "to
the tooth.")
- If using sauce, put the sauce in a large saucepan and heat until warm.
With a pasta fork, remove pasta from the pot and toss gentle.
